Raw material select
Pick good vegetable, remove parts with diseases, insects, rot and shrivel. over-ripe or unripe should also be selected out. All vegetables should be rinsed with water and then dried in a cool place, do not put in the sun.Cutting and blanching
Cut the cleaned raw materials into flakes, wires, strips and other shapes according to product requirements. During cooking, it varies according to the raw materials. Easy cooking one should be in boiling water boiled , more time for not easily cooked one.( Water temperature is generally above 150℃). Usually need 2-4 minutes.Cool and Drain
After vegetables boiled should cool them immediately by cold water. After cooling, in order to shorten the drying time, the centrifuge can be used to throw water. Also could use simple manual method by pressing. When water is drained, should be spread and let them cool for a while.Drying
According to different vegetables products, we should make sure about different temperature, time, color and moisture during drying. Drying is generally carried out in drying room. Usually has three kinds of drying room. First simple drying room used countercurrent blast drying. The second is a two-layer double tunnel, combining downstream and upstream drying room. The third drying room is box-type stainless steel hot air dryer, this temperature range is 65℃-85℃. Dry at different temperatures and cool down progressively. When use the first and second drying room, we should spread vegetables in the dish, and then put them on the pre-set drying rack. Keep the room temperature at about 50℃, and keep stir-fry them to speed up the drying, the general drying time need 5 hours.Sub-inspection and Packaging
